Rice Krispie® Chicken


was lucky enough to be raised in a home with an exceptional cook. My mom can look at any recipe in a cookbook and tweak it to make it her own. She has a vast repertoire of recipes that span a wide array of different types of cuisines. But, honestly, some of my favorite childhood recipes of hers are the simplest. This is why the first recipe I am going to share with you is as simple as they come. It is a tried and true classic and family favorite. It is her Rice Krispie® Chicken. This recipe is extremely simple to make, requires very little cooking experience, and contains only a few main ingredients.

My goal with sharing these recipes is to help incorporate simple, yet delicious, meals into your rotation. I’m not culinary expert, and I do not come up with my own masterpieces. I just like the idea of helping other people make simple, delicious, and easy recipes.



1 pound boneless, skinless chicken breasts

3 cups Kellogg’s® Rice Krispies® cereal

1 stick unsalted butter

salt and pepper to taste

Step One:

Preheat your oven to 350 degrees F (180 C). Lay some foil down in an oven-safe roasting/baking pan to help make clean up easier. I personally use this All-Clad Stainless-Steel Lasagna Pan, even though this is not its intended use. (I got it for my wedding and use it for almost everything.)

Step Two:

Use a rolling pin to roll the Rice Krispies® into smaller, broken up pieces. (You can also use whatever you have handy to crush the cereal.) Try to avoid rolling out the cereal too much in order to prevent a dust-like texture. This will create a more soggy finished product instead of the crispy texture we are going for. Some dust is okay and inevitable. Once the cereal is crushed, transfer to a mixing bowl.

Step Three:

Melt the butter on the stove in a fry pan.

Step Four:

Set up an assembly line. Place your melted butter, crushed cereal, and prepared baking pan in a row on your counter.

Step Five:

Dip one chicken breast in the melted butter. Make sure the chicken is completed covered in butter. Once coated, transfer the chicken breast to the crushed Rice Krispies®. I usually flip the chicken breast over a few times in the cereal and lightly press the cereal into the chicken. Finally, move the chicken onto the baking pan. Repeat this step for all the chicken. If you notice the chicken breasts are not completely covered in Rice Krispies®, you can drizzle the left over butter on top of the chicken breasts. Then, press any left over cereal on to the chicken.

Step Six:

Move baking pan to oven and cook for one hour or until golden brown. (165 degrees F or 75 degrees C is considered a safe internal temperature for poultry.)

Once cooking is complete, let cool and serve!
